Hunters are filling freezers with wild game. What do you think is the tastiest wild game on hoof or wing? Is duck better than goose? Do you prefer elk to venison?

I've enjoyed every game bird I've eaten. Maybe because it is always a special meal, the bird gets more gourment treatment than a regular meal. All white meat pheasants and dark meat ducks and geese meat are equally tasty to me. I've never eaten grouse, but have heard the flavor is excellent.

On hoof, wild boar and elk are my favorite. I remember eating an elk burger a few years ago that didn't seem to drip once on the grill. It was excellent. Since my elk hunting uncle passed away, I've remembered him - and the elk meat he gave me - fondly.

I once had a shepherd's pie at a restaurant that contained wild boar sausage. It was great, but frankly, when you make something into sausage, it's hard to tell what the original meat really tasted like.

That's probably the most exotic game I've ever had. There's venison, but I think that's pretty standard.

A really good meal with wild game is pheasant fajitas. Just do the same as you would with chicken, and they're great! (If you need a great recipe, just ask!)

I never thought of pheasant fajitas. If you could post the recipe, readers might appreciate it. It sounds excellent.

A few years ago, I had a duck pizza. The restaurant that prepared it used a regular crust, shredded duck meat and goat cheese. On a 10 point scale, it was a 10.

1-2 lbs of pheasant
red, green, yellow, orange peppers (any or all!, no more than 3 whole peppers total)
lawry's fajita marinade (marinade the meat for a half hour)
salt and pepper to taste
one large onion
heat all together in a skillet. some people prefer to brown the meat first, but you don't have to
serve on tortillas with sour cream and spanish rice!

My abilities at preparing wild game are very limited, obviously it takes a skill to make the delicious meals. I have found nothing tasty about any of the dishes I have prepared, however, a friend of mine who is a wild game chef can do some amazing things with all types of wild game from pheasants to alligators. Yeap, it must take some skill, cuz 5 lbs. of onions ain't doing it.

Don't forget about the squirrel, whether deep fried or bar-b-qued, it tastes just like chicken. Thinking about this also brings back memories of a young boy wandering through the woods with Dad, looking to hone his skills of the bolt action .22 that was passed down for the second generation. Anyway, just thought I would throw that in, since many people don't think about the small game that many youth hunt while growing up.
